Introduction Carelian Caviar

Welcome to the world of Carelian Caviar, the luxurious sturgeon roe farmed in the beautiful, lake-filled Savonia region of Finland. Premium sturgeon caviar produced with minimal environmental impact – a real sustainable luxury.

Our production system is completely sustainable and has been since the very beginning. Everything from the sturgeons is taken care of and energy and water is consumed only when necessary.

Carelian Caviar has worked for more than a decade to develop sustainable methods for rearing sturgeon and produce farmed caviar of the highest quality. Carelian Caviar is a Nordic project run by a team of highly experienced experts. The initiative to cultivate sturgeons indoors came about in 2000 when the ideal location was found in Varkaus municipality in Northern Savonia - Finland's lake district.

Since then, we have successfully cultivated Acipenser baerii sturgeons from Siberia to make "Baerial" caviar. Using the latest technology, we are able to follow each sturgeon individually and harvest the caviar as soon as it is perfectly ripe. This technique enables us to consistently produce caviar of the highest quality.

Being an entrepreneurial group of Finnish fish farmers, we naturally wondered, could sustainable sturgeon be farmed indoors? Our farm in North Savonia, the heart of beautiful Finnish Lakeland, seemed to be the ideal place to try. Fortunately located between two lake systems, we were literally awash in the huge amounts of fresh water required to cultivate sturgeon. A handful of investors from the Åland Islands saw the viability of our idea and came on board. It was extremely important that our farm wasted nothing and that we contributed to the local environment and economy as opposed to draining them. Logo
